I thought I would just post a quick blog today. I made these melt-in-your-mouth biscuits a little while ago and they are soooooo tasty.
Sorry the photos are so bright, but hopefully you can still see how pretty they are.
The coconut oil makes these sweet and flaky and a nice change from the usual baking powder biscuits.
Plus, these are vegan....
Coconut Oil Biscuits
(Slightly adapted from Whole Foods Market)
2 cups flour
1 Tbsp baking powder
1 tsp sugar
pinch sea salt
1/2 cup solid coconut oil
3/4 cup canned light coconut milk
Preheat oven to 425°F. Line a baking sheet with parchment paper.In a large bowl, whisk together flour, baking powder, sugar and salt. Cut in coconut oil with a pastry blender or two knives until mixture resembles coarse crumbs. Stir in coconut milk just until a dough forms.
Pat together and flatten on a lightly floured work surface to a rectangle about 1/2-inch thick. Cut into 12 squares (or use cookie cutter to cut out shapes) and arrange on the prepared baking sheet, about 1 to 2 inches apart.
Bake until golden brown, 15 to 17 minutes. Cool slightly before serving.
According to the site I got the recipe (Whole Food Market) the nutritional info is - Per serving (recipe makes 12 servings): 170 calories, 10 fat, 17 carbs, 2 protein.
I love the subtle hint of coconut in these. So good.
I also brushed the tops with a bit more coconut milk and a pinch of sugar.
Biscuits make tea time so much more enjoyable :)
