You've heard that bacon makes everything better.
It's true. There is not too many things that can't be improved by adding bacon.
Take cabbage for example.
Pretty boring, right?
Well, not if you wrap it in bacon. Seriously. that simple step transforms the lowly cabbage into a drool worthy experience. Plus you can enjoy a generous indulgence for not too bad of a nutritional count.
For half of the entire recipe - that would be HALF of a cabbage + 4 pieces of bacon - it is:

Bacon Wrapped Cabbage
1 head of cabbage
8 slices of bacon
1 Tbsp olive oil
1 Tbsp Parmesan cheese, shredded
salt & pepper
Preheat oven to 400. Line a cookie sheet with parchment paper, set aside.
Cut the cabbage in half. Then in half again. And, in half again. You should have a total of 8 wedges. Carefully trim the core of the cabbage away from the rest of the wedge.
Wrap each wedge of cabbage in a piece of bacon.
Drizzle with the olive oil then sprinkle with the Parmesan cheese, salt & pepper, and onion and garlic powder.
Bake at 400 degrees for approx 40 minutes. The outer cabbage leaves will be turning brown. You can test them by sticking a fork in them. When they are fork tender you are good to go.
Remove and serve hot.
It may look dry but, trust me, it's not. The little bit of bacon fat and olive oil seep into the cabbage and make it very tender and moist and the Parmesan and spices are just enough added flavor.
I ate 4 wedges for my dinner but these would be great as a vegetable side dish served with, say, meatloaf and mashed potatoes, or something similar.
I do know I will be making these again. Definitely on those days I am feeling too lazy to have to do any prep work.
